1. Smylianski fasul
Bulgarian bean soup. Due to its simplicity and deliciousness, it is probably the single most popular and common dish in Bulgarian cuisine. It is served for centuries as main food, especially in rural regions. The popularity of the bean soup is due to the many varieties of beans available in Bulgaria, as well as the nutritional value of the dish, which is eaten as a main course in the common case. Our region is famous all around the country for its Smylianski bob variety.

2. Klin with rice
Klin is a typical Rhodopean dish which is deliciously warming and a filling staple. Klin can be eaten as a main supper dish or an accompaniment. It’s basically a type of rice pie, but don’t  be put off - it tastes much better than it sounds! Klin is scrumptious served hot, especially when the cold weather sets in, with Bulgarian yoghurt - but it can also be eaten cold with honey or strawberry jam. Different variations of the dish can be made using flavors according to your mood and the season.

3. Patatnik or patetnik
Bulgarian potato dish characteristic of the Rhodope Mountains. Patatnik is made of grated potatoes, onions, salt and spearmint, all mixed and cooked on a slow fire. The grated potatoes are squeezed out and mixed with the eggs, onions and cheese. When serving, it can be garnished with yogurt or vegetables.

4. Moussaka
Moussaka is made with potatoes, ground meat, and tomatoes then it is topped with a white sauce and baked. Throw in some bay leaves too and you will not want to leave the table until you have finished up the entire baking pan. Eat this with some yoghurt on to.

5. Stuffed Peppers
Very delicious meal - try it if you can. If you like Dolmas you are guaranteed to love this meal too. It's pretty much what it says - green or red peppers stuffed with ground beef or pork and rice and boiled. Sometimes the peppers are topped with a seasoned tomato sauce or whisked eggs. Another variation of stuffed peppers is fried peppers stuffed with cheese and whisked eggs.
